{Recipe} Easy Peasy (Dairy Free) Muffins

I thought I'd do a quick post on the recipe for those muffins I made earlier in the week.. They really are simple and take no more than about 10 minutes to get into the oven - and what's even better is that you can substitute Soy in place of the Dairy - I have done so and it still works well..


Easy Peasy (Dairy Free) Muffins

250 g self-raising flour
140 g caster sugar
½ teaspoon vanilla essence
1 egg- lightly whisked
120 ml light olive or vegetable oil
150 ml of (soy) milk or yoghurt (any flavour eg use strawberry yoghurt for strawberry muffins etc or simply use vanilla) or butter milk
About 180 g fruit
( great combos – peach or nectarines 1 chopped up small, one cut to slices to go on top, canned diced pear or apple- drained with a bit of cinnamon, canned pineapple pieces, small can is enough- reserve 12 pieces, finely chop up rest, mashed banana + sliced rounds for decoration + little bit of mixed spice/cinnamon/nutmeg, strawberries- finely chopped, blueberries, chocolate chips or pieces etc.)

  1. Mix everything in a bowl, until just combined, do not over mix. 
  2. Spoon into muffin cases in a 12 large muffin tray. You can decorate the top with reserved fruit pieces and sprinkle with demerara sugar or leave as it is. 
  3. Bake at 180 C (fan forced) or moderate oven for 20-25 minutes – until golden brown on top and inserted skewer comes out clean. 
  4. Cool on a rack.
