I decided to make a zucchini slice today, without a proper recipe.. I knew what the general ingredients and kind of how to make one, but I just worked with what I had and the end result was great - even Lucas had a couple of pieces!
Dairy Free Zucchini Slice
1 large zucchini, grated
1 carrot, grated
1/2 onion, diced finely
4 rashers of bacon, diced
1/2 cup of plain flour
2 eggs
1 satchel of Campbell's Real Stock Chicken Paste
1. Preheat oven to 200 degrees Celsius.
2. Grate the zucchini and then squeeze out as much juice as you can. Discard juice.
3. In a large bowl, add all the ingredients and mix.
4. Pour into lined 20x20cm square baking tin and bake for 20 minutes or until golden brown
5. Cool, cut and serve..
